Ensure traceability of food and beverages

Traceability is the ability to follow a product backward to its inputs and forward to its destinations. That chain has to remain intact as materials are received, transformed, packed and shipped.

Capture the links between lots

Supplier, origin and receiving records identify incoming materials. Production records show which inputs entered each batch. Packaging and shipment records then connect finished lots to customers and locations.

Test the recall path

A mock recall reveals missing links before a real incident. Start with an ingredient lot and find every finished lot that used it; then reverse the exercise from a finished product to all contributing inputs.

Make the information usable under pressure

A traceability process should let authorized staff find quantities, dates, inspection status and destinations quickly. Barcodes and integrated records can reduce manual re-entry, but disciplined scanning and data quality still matter.

What to take into your next discussion

  • Connect supplier lots, production batches and outbound shipments.
  • Test both backward and forward tracing.
  • Keep recall information accessible to the people who must act.
